My absolute go-to drink is Chai. Just thinking about it makes me warm inside. Sitting on the couch with your house socks on and in your best pajama pants, warming your hands with a cup of steaming, spicy Chai. Then just try to stay cranky. This is what you need for a Pumpkin Spice Chai Latte:
200 - 250 ml hot milk (instead of regular milk you can use almond milk or soy milk - that even gives a little extra sweetness)
a sachet of Chai Latte or from a packet from Chai Company (I use either because unlike other brands, it contains no fragrances, colors and flavors: just pure nature and therefore good for you!)
1/4 teaspoon speculaaskruiden (pumpkin spice is hardly available in the Netherlands, if at all, but speculaaskruiden tastes almost the same!)
Here's how to make it:
Peel the pumpkin and cut it into cubes. You need very little, enough to fill 1/4 cup. Throw the pieces into a pan of boiling water and cook for about 10 minutes, or until they are soft enough to be crushed against the side of the pan with a spoon.
Drain them and puree them in the blender or using a hand blender into a smooth pumpkin puree. Make sure there are no pieces left in it, otherwise you will encounter them later while drinking and that is not tasty.
Put the contents of Chai Latte in a cup and top up with 200 - 250 ml of hot milk. Stir well.
Pour the Chai Latte with milk into the pumpkin puree in the blender and add the specula cheese spices. Blend until frothy; nice & frothy!
Pour your Pumpkin Chai Latte into a mug and sprinkle some fresh nutmeg on top. And, if you've really earned it (and let's face it: you have!), a big dollop of whipped cream.
